Some people know how to speak Chinese. Michel Troisgros can talk cooking. He was to the manor born, with a father, uncle and grandfather who were all major figures of international gastronomy. In their time, they revolutionized French and international tastes by inventing service through the plate, the right cooking time and the modern culinary discourse. But Michel did more than just maintain their Roanne restaurant: he improved his palate by traveling and taking a keen interest in people and things. Thanks as well to a mother of Italian descent, he has made use of home cooking references to make his cuisine more varied and popular. He talks about his past and his current aims.
