Pierre Gagnaire
Pierre Gagnaire, whose restaurant is on the rue Balzac in Paris, is not your average chef. While other cooks leave nothing to chance in preparing their dishes, so that each and every one of them is recognized as a work of art, Gagnaire prefers to work in a single attitude. He creates in a steady flow: His menu changes monthly, and his dishes daily, when, in front of the oven, he is capable of rethinking everything on the spot, depending on the produce, his level of energy and the person he is cooking for. Of course, this method is exhausting, and in a 25-year career, he can't lay claim to any classic dishes since he stops making them before they can become classics. Still, there is something heroic in this determination to remain in the eternal present.
